BAKED SCAMPI

“A recipe from mom Anna, really simple and quick but the result will surprise you. It really takes very few steps and ingredients to get a delicious recipe, to savor all the aromas of the scampi, of the sea, but at the same time delicate thanks to the emulsion of EVO oil and wine. The raw material is very important so, make sure they are nice and fresh!

Recipe that comes from our history of over 106 years of culinary traditions... all the steps explained by Alice!

 

 

 

PROCEDURE:

 

First of all, we wash, clean, and cut the scampi in half.

Once this is done, we place them in the baking tray.
We prepare the dressing, in a bowl we add extra virgin olive oil, and ½ glass of dry white wine, we use Pigato BIO, and now we mix to obtain an emulsion.

At this point, we season all the scampi using a spoon.

Once seasoned, we sprinkle some coarse salt, Persian blue salt.

We bake everything for about 10/15 minutes at 220°.

Once baked, they are ready to be enjoyed directly. You can add a splash of lemon to taste once plated.
